New use for prunes Options

I have just read in the Times2 supplement about using prunes in recipes instead of fat. Sounds weird, but must be true. It's been writtne by their nutritionist. Apparently what you do is lliquidise 250g of dried prunes with 6 tbsp of hot water to the consistency of single cream. You just swap each gram of fat for a gram of prune puree.

Prune puree has around 93 calories in 2 tbsp compared with 265 cals in the same weight of butter or marg. This lowers the fat and calorie content, boosts the fibre content and adds some iron and calcium too. You may be able to cut back on sugar as the puree is quite sweet.

Erm....PRUNE pastry on a steak and kidney pie? Well, I suppose it takes all sorts and it may be OK in cakes. It'll be interesting to see how it combines with sugar and eggs!

Jean - I think the idea was to use it for making biscuits, not steak & kidney pie!! It would taste most peculiar. When I've got through my low fat biscuits and cakes I made over Christmas, I may give it a try.

My aunt used to make a stew using prunes instead of carrots. She was a wonderful cook but this was the one dish I never liked. On the other hand my parents loved it!

I make quite a few savoury dishes using fruit, plums, apricots etc. It adds another dimension to the meal, and we both like it.
